Obituary for Elizabeth "Betsy" Einck

Elizabeth “Betsy” Einck, age 100, passed away on Tuesday, April 7, 2020, at the Crossroads Care Center in Worthington, MN. She was born on February 29, 1920, in Ashton, IA the daughter of William and Elizabeth (Kolbeck) Seivert.
Betsy was united in marriage to Peter Einck on July 30, 1940, in Ashton. They farmed in the Wilmont area until 1974 then retiring and moving to Worthington. After leaving the farm, she was employed at Worthington Regional Hospital in the dietary department. She was a care giver for many family members and friends.
The Meadows of Worthington became her home in November of 2012. She enjoyed her time there making many friends and enjoyed many card games with them.
She was a member of St. Mary’s Catholic Church and was active for many years in the WCCW.
Betsy is survived by her daughter-in-law, Lois Einck; grandsons, Monte (Denise), Brad (Marion), and Nathan (Kari), and eleven great grandchildren. She was preceded in death by her husband Peter; son Dan; daughter Carol; parents, and twelve brothers and sisters.
Memorial services will be held on Friday, July 10, 2020, at 10:30 a.m., at St. Mary’s Catholic Church in Worthington, MN, with Father Jim Callahan officiating. Burial will be in the St. Mary’s Catholic Cemetery in Worthington.
Benson Funeral Home in Worthington is in charge of the arrangements.
